I’ve often wondered why the rehab housing shows I’ve watched don’t feature induction ranges.
Induction ranges or cooktops are a bit more expensive than gas or electric counterparts but their operation is much less expensive, even natural gas. They are more efficient not only in the operation but maintenance and cooking controls and time.
Water boils in about half of the time of a standard electric element or gas burner and the controls are more responsive. Whether you want to boil, fry, simmer or keep warm the induction range has far more exact controls than either the gas or electric. Any cook who has tried to melt chocolate on an electric or gas range would love how that can happen on an induction range.
You need to have induction ready cookware but those are readily available and can often be found in many homes already. Cast iron such as Lodge works excellently with induction.
So why aren’t they used more in rehabs or new construction?
